Palate Pleasing Pecans

2 cups James pecans
1 1/2 tbsp. vegetable oil
1/2 cup confectioners' sugar
2 tsp. ground cinnamon
2 tsp. ground cloves
2 tsp. ground nutmeg
2 tsp. grated lemon rind

Spread pecans in a single layer in a 10-inch pie plate. Drizzle oil evenly over pecans; stir well.

Microwave on high power for 2-3 minutes. For conventional oven, bake at 300 degrees for 20-25 minutes, stirring halfway through.

Combine remaining ingredients in a quart bowl. Add hot roasted nuts and shake or toss to coat. Remove nuts and cool.

Makes 2 cups.


Monkey Bread

1 loaf frozen bread dough, thawed
1 sm. box instant butterscotch pudding
2/3 cup dark brown sugar
1/2 cup James pecans
1 stick butter

Arrange dough in bottom of a Bundt pan. Mix dry ingredients and dust over dough. Dot with butter. Leave in cold oven overnight. Next morning, bake at 350 for 30 minutes. Tear off chunks and "eat like a monkey!"


Pecan Crunch Pie

11 Graham crackers
3 egg whites
1/2 tsp. baking powder
1 cup sugar
1/2 tsp. vanilla
1 cup chopped pecans

Preheat oven to 350. Crush Graham crackers and reserve. In mixing bowl, beat egg whites with baking powder until they hold a peak. Slowly add sugar to make a stiff meringue. Add vanilla. Slowly fold in cracker crumbs and chopped pecans. Spoon into well greased pie pan.

Bake 30 minutes. Cool and garnish with whipped cream. Yield: Eight servings.
  Hot Chicken Salad

5 oz. can boned chicken
1 can cream of chicken soup
1 cup celery, chopped
1 tsp. lemon juice
1/2 cup pecans, chopped
3/4 cup mayonnaise
1/2 tsp. pepper
1/2 cup grated cheddar
1 small bag potato chips, crushed

Preheat oven to 400 degrees. Combine all ingredients except potato chips. Pour into casserole, cover with potato chips. Bake at 400 for 20 minutes.


Fudge Pie

1 stick butter
2 oz. dark chocolate
2 eggs
1 cup sugar
1/4 cup flour
1/4 cup pecans, chopped
1/2 tsp. vanilla

Preheat oven to 325 degrees and grease a 9-inch pie pan. In a double boiler, melt butter with the chocolate and set aside.

In a mixing bowl, beat the eggs with the sugar. Add flour and mix well. Add chocolate mixture, vanilla, and fold in pecans. Pour into pie pan and bake for 30 minutes.

Serve warm with ice cream or chocolate sauce.


James Hican Cake

1 1/2 cup granulated sugar
1/2 cup butter
2 cups flour, sifted
1/2 tsp. salt
2 tsp. baking powder
3/4 cup milk
4 egg whites, beaten
1 tsp. vanilla
1 cup hickory nuts, chopped

Preheat oven to 350 degrees. Grease two 9-inch cake pans. Cream sugar and butter. Add flour, salt, and baking powder alternately with milk. Beat well. Fold in beaten egg whites, vanilla and hickory nuts. Bake 35 minutes.
